Gut-positive quinoa bowl recipes

If you haven’t tried quinoa yet, you are missing out on an extremely versatile superfood that delivers a variety of nutritional value.

Quinoa is actually a seed, but nutritionally it’s considered a whole grain. It’s been grown for food for thousands of years, originating in South America. Not only is it high in fiber, it’s also a complete protein. That means it delivers all nine essential amino acids, making it a great protein source for anyone, but especially vegetarians and vegans. It’s also gluten-free.

Quinoa’s high fiber content makes it a gut-positive food. A diet rich in plant-based foods supports holistic wellness by encouraging a more diverse, resilient gut microbiome. Here are some gut-healthy recipes that feature quinoa along with other foods to support your gut health!

Salmon quinoa bowl

This recipe serves two and takes only five minutes to prepare.

Ingredients:

  • 6 oz smoked salmon
  • 1 cup quinoa, cooked and cooled
  • ½ cup chopped celery
  • ½ cup canned chickpeas
  • ½ cup diced tomatoes
  • 1 lemon, wedged
  • 2 tbsp chopped parsley
  • ½ tsp paprika
  • ½ tsp garlic powder
  • ½ tsp thyme
  • 1 tbsp olive oil
  • Salt to taste
  • Black pepper to taste

Instructions:

  1. Divide quinoa between two serving bowls, then flake 3 oz. salmon onto each bowl.
  2. Divide the remaining ingredients between the bowls and garnish with lemon wedges to serve.

Quinoa burrito bowl

This recipe makes four servings and takes about 35 minutes to prepare.

Ingredients:

  • 4 cups lettuce, chopped
  • 2 avocados, diced
  • 1 cup quinoa, cooked
  • 1 cup grape tomatoes, halved
  • 1 yellow onion, diced
  • 1 can black beans, rinsed and drained
  • 1 lime
  • 2 cloves garlic, minced
  • 1 tbsp olive oil
  • 1 tsp chili powder
  • 1 tsp cumin
  • Cilantro to taste

Instructions:

  1. Mix olive oil, garlic, chili powder, cumin and lime juice, then pour over cooked quinoa.
  2. Assemble each bowl with quinoa, avocado, tomatoes, onion and black beans. Garnish with fresh cilantro and enjoy!
