Chocolate Zucchini Breakfast Cookies

  • 1 cup oats
  • 1 mashed banana
  • ½ small zucchini, grated + moisture squeezed out
  • ¼ cup almond butter
  • ¼ cup chocolate chips
  • 1 scoop Nutrilite Organics Plant Protein Powder - Chocolate
  • 1 scoop Nutrilite Organics Greens Superfood Powder

Preheat oven to 350 degrees and line a baking sheet with parchment paper. Mix all ingredients in medium-sized bowl. Form dough into 1-inch balls and flatten into cookie shape. Bake for 12-15 minutes or until cooked through. Let cool 5 minutes then enjoy.

You can easily change up the recipe by adding your favorite mix-ins, such as nuts, seeds or raisins. Make a big batch to keep in the freezer so you’re always ready with a nutrient-rich snack!
